I’m not exaggerating when I say that I very well may love avocados more than anyone else in the world. Not a day goes by that I don’t consume at least one, and just the thought of cutting into a perfectly ripe avocado makes my mouth water and heart skip a beat. I once thought it was just us Texans who went crazy for this delectable fruit (yes, fruit), but cooks and foodies all over are celebrating both their versatility and high nutritional value.   4. I love this post – avocados are one of my favorite things and I’ve been buying them by the bagful! My favorite way to eat them is smashed on toast with sea salt and pepper. Yum!

    A friend once made an avocado, mango and quinoa (with a drizzle of lemon) salad – so good I now make it regularly.
    My favourite way to eat them however is mixed with hearts of palm, sweetcorn and green chicory leaves (with a dijon mustard, oil and cider vinegar dressing)… unusual but amazing!

  11. This is perfect! I love avocados! I have been looking everywhere for different ways to include them into my daily diet, rather than the mundane way of eating them straight as it is with some honey drizzled on them – which is good too, but variety is much more fun. Thanks for the recipes.
