El Jefe’s Dorade

Ingredients

Fresh dorado (mahi mahi) fillets, without skin, cut extra thin

Milk

Flour

Salt

Pepper

Butter

Lemon

Capers


Instructions

Coat the fish fillets in milk, then cover in a flour/salt/pepper mixture.

On medium-high heat sauté the fillets in butter until crisp and light brown on the outside.

In a separate pan, melt butter (take care not to brown it), then add capers and fresh lemon juice. Pour over the fish and serve warm.
