Healthy Snacking with Camila Alves

I had so much fun shooting this video with Camila Alves at my house last week. Can’t believe she managed to squeeze in time for it on the morning of the annual MJ&M event she co-hosts to raise funds for her and husband Matthew McConaughey’s incredible charity, just keep livin, which we got to talk all about in the video above.

I’ve loved getting to know Camila over the past year or so, and the warmth and generosity you’ll see on display in the video above reflect exactly who she is in real life — this gal is the real deal. Target partnered with just keep livin to help them expand the program, so I was thrilled when they asked us to team up and share some of our kids’ favorite after-school snacks, as well as how the foundation is changing the lives of kids across America.

Broccomole

Healthy After School Snacks with Camila Alves

Serves 4

Ingredients

  • 1 cup broccoli florets
  • 2 ripe avocados
  • 1/3 cup chopped onion
  • 1/2 chopped jalapeno, ribs & seeds removed
  • 1/2 bunch cilantro
  • 2 limes
  • 1 clove garlic, chopped
  • salt

Instructions

In a pot of boiling water, cook broccoli until very tender. Drain and run under cold water, then add it with all the other ingredients to a food processor. Pulse until well combined and mashed. Eat with raw veggies and pita chips!

Beet Hummus

Ingredients

  • 2 cans of chickpeas (garbanzo beans) rinsed and drained
  • 1 cup tahini
  • 1/4 cup of fresh lemon juice
  • 3 large garlic cloves minced
  • 1 teaspoon ground cumin
  • 3 medium beets cooled cooked (wrap beets in foil and cook at 425 degrees for 1 hour or until tender)

Instructions

In food processor combine all ingredients and puree until creamy. If too thick, add a little water to get to desired consistency.

Transfer to serving bowl and garnish with feta cheese, thinly sliced scallions, and sliced radishes.

    Super lovely video with very healthy recipes….noted the little white colander which was chipped a bit just like mine are. Makes it all more real for the presentation.
