A Build-Your-Own Ricotta Toast Spread

Let’s get one thing straight: I’ll never turn my back on avocado toast. But every now and then, even the most die-hard avo-toast fan needs to expand her horizons, and given how quickly the green fruit turns brown, everyone’s favorite trendy toast doesn’t exactly make for the best party food. Today’s recipe, however, is just that. We partnered with Blue Diamond Almonds to bring you a build-your-own ricotta toast spread that’s refreshing, unexpected, and best of all, perfect for a casual weekend brunch or mid-day shower. To set up a complete build-your-own toasts spread, you’ll need:

  • fresh ricotta
  • nectarine, sliced
  • fresh cherries, pitted and halved
  • blueberries
  • pomegranate seeds
  • fresh fruit jam (we love apricot!)
  • honey
  • Blue Diamond Roasted Salted Almonds
  • fresh basil
  • sunflower sprouts


And don’t forget the most important ingredient of all: the toast! I grabbed some fresh bread from the bakery and had it sliced on the spot. Then just before serving, I arranged the slices on a baking sheet and set it in a 350-degree oven, letting it toast for 5 minutes on each side.

Set out all the ingredients, then let guests flex their culinary skills by topping the toasts to their liking. Oh, and if you’re worried about about all that sweetness, don’t be. The salty crunch from the Blue Diamond Roasted Salted Almonds is the perfect balance atop any toast.

A few of the toast topping combinations we loved:
