Jicama Slaw with Tequila-Lime Dressing

Jicama Slaw with Tequila Lime Dressing

Ingredients

for the tequila-lime dressing:

  • 2 tablespoons mayonnaise
  • 2 tablespoons greek yogurt
  • 1 tablespoon Sauza Tequila
  • 1 tablespoon agave
  • juice of 1 lime
  • 1/2 teaspoon chili powder
  • 1/2 cup cilantro leaves and stems
  • salt and pepper

for the slaw:

  • 3 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 jicama, peeled and julienned
  • 1/2 cup pomegranate seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup cilantro leaves, chopped

Instructions

  1. Combine all the ingredients for the dressing in a blender or food processor and blend until smooth and well combined.
  2. In a large serving bowl, mix together the cabbage, carrots and jicama, then toss with dressing. Allow to marinate for at least 1 hour and up to 4 hours.
  3. Add rest of ingredients just before serving. Toss and eat!
