Pistachio-Crusted Salmon

Serves 6

Pistachio-Crusted Salmon

Ingredients

6 pieces of wild salmon

1 cup of pistachio meats (Trader Joe's makes a great product so you can cut out shelling time)

One large orange, zested (or any other kind of citrus) 

1 teaspoon chopped fresh garlic cloves

Italian parsley (optional)

Salt and black pepper


Instructions

  1. Crush the pistachios with a mortar and pestle (or less fancy in a Ziploc bag with a rolling pin or wine bottle!).
  2. Add garlic, orange zest, salt and pepper and mix to combine.
  3. Place a thick layer of the pistachio mixture on salmon filets and bake at 450 for 15 minutes.
  4. Finish with a squeeze of fresh orange juice and chopped parsley.

    I’ve been craving Fish for the last 2 weeks and have been begging my husband to want to eat fish with me but he hasn’t been up for it. After seeing this I’m going to have to make some Salmon tomorrow, regardless of him not wanting fish. I think if he sees this he’ll want to eat fish everyday! Thanks for sharing this recipe!

    Yum! I live in Alaska and we eat salmon all the time. We have had pistachio crusted halibut, but never salmon. Will give it a try! 🙂 Thanks

    Just made the dish, but I placed it in a parchment package and baked at 350 degrees for about 35 min….turned out to be absolutely delicious.
