Can’t believe we’re over half-way through September — the leaves are beginning to turn and I hear the temps are going to drop this very week! That can only mean one thing: I’m thinking about pumpkins and treats made with warm spices, and this Pumpkin Cheesecake with Gingersnap Crust will satisfy my craving delightfully! Made with velvety cream cheese and pumpkin puree, I’m pretty sure I could eat the entire cheesecake.     The recipe sounds great! What type of pan do you use? I don’t think it was specified, unless I missed something?
