Hi guys! Popping in with a quick tasting of my current fave 5-minute appetizer …the perfect thing for using up all those juicy ripe summer tomatoes that are at their peak for just a few weeks longer. Checca is a traditional Italian sauce made of chopped tomatoes marinated in olive oil, lots of minced garlic and coarse salt (let it all sit at room temp for a couple hours before serving.) It’s a great raw topping for spaghetti, pizza or these yummy crostini. To make this simple hors d’oeuvres, I topped slices of toasted baguette with creamy ricotta,  checca sauce and ribbons of fresh basil and set out a big tray with chilled rosé for a casual summer get-together. One last taste of summer’s bounty…
