for the salad:
- 5 ounces arugula
- 2 apples, thinly sliced
- 1/2 cup crumbled goat cheese
- 1 cup toasted walnuts
- 1/2 red onion, thinly sliced
- 1/2 cup dried cranberries (soak them in hot water for 30 minutes before)
for the maple cider vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 minced garlic clove
- 1 tablespoon maple syrup
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Soak dried cranberries in hot water for 30 minutes and set aside.
- Add arugula, sliced apples, red onion, and dried cranberries to a large bowl.
- To make the apple cider vinaigrette, combine the ingredients in a blender or mason jar and mix.
- Drizzle maple cider vinaigrette over the salad and toss until the dressing is spread evenly throughout.
- Top with crumbled goat cheese crumbles and toasted walnuts and enjoy!
