Ingredients

for the salad: 

  • 5 ounces arugula
  • 2 apples, thinly sliced
  • 1/2 cup crumbled goat cheese
  • 1 cup toasted walnuts
  • 1/2 red onion, thinly sliced
  • 1/2 cup dried cranberries (soak them in hot water for 30 minutes before)

for the maple cider vinaigrette:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 minced garlic clove
  • 1 tablespoon maple syrup
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Soak dried cranberries in hot water for 30 minutes and set aside.
  2. Add arugula, sliced apples, red onion, and dried cranberries to a large bowl.
  3. To make the apple cider vinaigrette, combine the ingredients in a blender or mason jar and mix.
  4. Drizzle maple cider vinaigrette over the salad and toss until the dressing is spread evenly throughout.
  5. Top with crumbled goat cheese crumbles and toasted walnuts and enjoy!
