An easy chopped salad packed with delicious winter ingredients.
Ingredients

- 1 large sweet potato, chopped

- 2 tbsp olive oil

- 1 large radicchio, chopped

- 3/4 cup cannelini beans

- 1/4 cup pickled onions

- 1/4 cup shaved parmesan

- Fresh herbs of choice: dill, chives, etc.

- 1 serving lemon vinaigrette
Instructions
- Roast the sweet potato. Chop the sweet potato into large cubes and toss on a lined sheet tray with olive oil, salt, and pepper. Roast at 425 for 15 – 20 minutes until tender and golden brown. Remove from oven and set aside until ready to prep the salad.
- To prep the salad, add all of the ingredients to a serving bowl. Drizzle with dressing and serve right away. Enjoy!
