Description
These spice-rubbed grilled chicken thighs are an easy grilling recipe that will be on repeat this summer.

- 2 pounds boneless skinless chicken thighs
- 2 tablespoons paprika
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 1/2 teaspoons garlic salt
- A few grinds black pepper
- 2 tablespoons lemon juice
- 2 tablespoons olive oil, plus more for grill.
- 1 tablespoon honey
- 1/4 cup pitted green olives, chopped
- 2 lemons, thinly sliced
- Mint leaves and arugula, for garnish
Instructions
- In a medium serving bowl, stir together paprika, chili powder, cumin, oregano, garlic salt, and pepper. Add the chicken, then toss together to coat.
- Heat the grill or grill pan to medium-high heat. Use a paper towel to coat the grill gates with olive oil to prevent sticking. Grill the chicken until lightly charred and cooked through, turning occasionally, about 12 – 15 minutes.
- Meanwhile, whisk together lemon juice, olive oil, and honey.
- Place the chicken on a serving platter, top with the olives, lemon slices, arugula, and mint, then drizzle with the vinaigrette. Enjoy!
