Reverse Seared NY Strip Steak

Description

This formula is your ticket to a properly-cooked, perfectly-seared steak. 


Ingredients

  • NY Strip Steak
  • Olive oil
  • Salt and pepper

Instructions

  1. Set out the steaks at room temperature, brush with olive oil, and season with salt and pepper. Let sit for 30 minutes.
  2. Preheat oven to 200ºF
  3. Place steaks on a cookie cooling rack and set rack on top of a baking sheet. This allows the steak to cook while having minimal contact with the hot surface of a pan.
  4. Cook steaks until internal temperature is at 120ºF (45 minutes to an hour). Check the temperature as you go.
  5. While steaks are cooking, prepare fire (if cooking over a live fire) or grill.
  6. Place cast iron pan on fire to get it nice and hot.
  7. Remove steaks from the oven and let rest for 10 minutes.
  8. Give steaks a quick basting with butter and place on the cast iron skillet.
  9. Sear in skillet for about a minute on each side until internal temperature reaches 135º (medium rare).
  10. Remove, sprinkle with sea salt flakes, slice, and serve.
