These Creamy Pumpkin Overnight Oats are a 5-minute recipe that’s perfect for busy mornings. Just combine, shake, and pop in the fridge.


Ingredients

Units Scale
  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup milk of choice (oat, almond, regular dairy—take your pick!)
  • 1/4 cup pumpkin puree (keep leftover pumpkin in the fridge for up to a week)
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • pinch of salt
  • topping ideas: toasted pecans, sliced banana, coconut flakes, a splash of cream—or nothing!

Instructions

  1. Combine all ingredients in a mason jar.
  2. Shake to combine really thoroughly.
  3. Place in the fridge overnight, or for up to 4-5 days.
  4. Add toppings if desired. Enjoy cold, or warm up in the microwave for 45 seconds. Eat!
