Description
This Bitter Greens, Citrus, and Prosciutto Salad is the perfect balance of bright greens, juicy fruit, and just enough protein to make it a meal.

- 4 oranges (feel free to use a variety!)
- 1 head of radicchio, leaves separated
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 8–10 slices Prosciutto di Parma
- 1/4 cup roasted, salted pistachios, chopped
- Shaved parmesan
- 1/4 cup fresh whole mint leaves
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove chopped garlic
- 1 tablespoon honey
Instructions
- Remove the pith and peel from the citrus and slice.
- In a bowl, whisk together olive oil, vinegar, garlic, honey, salt, and pepper. Add radicchio and toss to coat.
- On a platter, layer sliced citrus and radicchio. Tuck in the slices of prosciutto.
- Sprinkle with pistachios, parmesan, and mint leaves.
- Drizzle with olive oil, season with salt and pepper.
Notes
- Opt for a variety of citrus to add visual interest and unique flavors to the salad. Blood oranges or Cara Cara oranges work particularly well.
- Feel free to get creative with fresh ingredients like pomegranate seeds, different types of nuts, and any fresh herb you have on hand.
