Apple, Pomegranate & Goat Cheese Salad

Apple, Pomegranate & Goat Cheese Salad

1 tart apple, thinly sliced (I used honey crisp) 

1/3 cup pomegranate seeds, juice reserved

4 oz crumbled goat cheese

3 cups mixed greens of your choice (I used baby kale and spinach)

1/4 cup olive oil

salt and pepper


  1. Place greens in a bowl and top with apple, pomegranate seeds, and goat cheese.
  2. Whisk remaining pomegranate juice (about 3 Tbsp), olive oil, salt and pepper in a small bowl.
  3. Pour dressing over salad and toss lightly.
