- 1 tablespoon butter or oil (optional)
- 1 cup amaranth
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon salt
- 2–2 1/2 cups milk or cream of choice (room temperature)
- 1/2 cup water (room temperature)
- 1–2 large pears, sliced
- 3 tablespoons maple syrup
- 1 tablespoon brown sugar
- pinch of salt
- toppings of choice
Instructions
- In a stovetop pot, add the butter if using, and bring the pot to medium heat. Add the amaranth, cardamom, and salt. Toast for a couple of minutes until fragrant. Add the milk and water. Bring the porridge up to a low boil, stirring frequently, until the porridge has thickened, about 10-15 minutes.
- While the porridge cooks, prepare the pears. In a pan, add the maple syrup, brown sugar, and salt. Bring up to a low/medium heat. Add the pears and coat in the maple syrup. Cook for a few minutes, stirring occasionally to ensure the sugars don’t burn.
- To serve, add warm porridge to a bowl and top with pears and additional desired toppings. Enjoy!
