An easy vegetarian version of your favorite taco salad..

For the Tofu:
- 1 block tofu, pressed and pulled into chunks
- 1 – 2 tbsp oil
- 1 shallot, chopped
- 2 cloves garlic, chopped
- 1 bell pepper, diced
- 1 tbsp taco seasoning of choice
For the salad:
- Romaine, chopped
- Roasted Corn
- 1 avocado
- Pickled onions
- Pickled jalapeños
- Cheddar cheese, grated
- Tortilla chips
- Lime wedges
- Chopped cilantro
For the dressing:
- 1/2 cup greek yogurt
- 1/2 cup sour cream
- 2 tbsp ranch seasoning
- Pickled jalapeños, depending on spices preference
- 1/4 cup chopped cilantro
- Pinch of salt and pepper
Instructions
- Prepare the tofu. Add oil to a pan and bring up to a low medium heat. Add the shallot with a pinch of salt and cook until the shallot begins to just turn golden. Add the garlic, bell pepper, and taco seasoning. Stir to combine and cook for a minute or so until the spices become fragrant. Add the tofu and sauté, coating the tofu pieces. Optional, if the tofu feels dry you can add a splash of water or a couple spoons of salsa. Remove from heat and set aside until ready to assemble the salad.
- Prepare the dressing. Add all ingredients to a food processor or blender and blend until smooth. Set aside until ready to assemble the salad.
- Assemble the salad. Add all ingredients to a large bowl. Top with lime juice and dressing. Enjoy!
