If I had to choose just one recipe to represent this summer so far… this sriracha-spiked street corn would be it. Mainly because I can’t stop making (and eating) it: for lunches, dinners, happy hours, and barbecues, and I typically make a solemn promise to several guests that I’ll share the recipe on the blog. So here it is in all it’s ridiculously simple glory. Don’t be alarmed by the fact that a fair amount of mayonnaise is involved, and don’t, I repeat do not, substitute yogurt as some healthy-minded cooks (me) might be tempted to do. And did I mention that it’s highly addictive? Consider this your fair warning…
Sriracha-Spiked Street Corn
Ingredients:
- 4 ears of corn, shucked and split in half to form 8 pieces
- extra-virgin olive oil
- garlic salt
- 1/3 cup mayonnaise (I prefer classic Hellmann’s)
- 1 tablespoon sriracha sauce
- a bunch of cilantro, roughly chopped
- a couple tablespoons chili powder
- 3 limes, each cut into 6 slices
- course flake salt, like Maldon
Instructions:
- In a small plate, pour a bit of olive oil and roll the corn in it to evenly coat. Sprinkle all over with garlic salt.
- Heat a grill or grill pan to high heat, and grill the corn until slightly charred, about 5 minutes. Turn occasionally to cook on all sides.
- In a small bowl, combine the mayonnaise, sriracha and a squeeze of lime juice. Whisk to combine.
- When the corn comes off the grill, slather it with the mayonnaise mixture, than sprinkle with cilantro, chili powder and a sprinkle of coarse salt. Roll all the corn cobs around in the mixture to get it all evenly coated, and serve with slices of lime so guests can squeeze more juice as they like.
- Embrace the messiness… I promise, it’s worth it.

YUM. This is my kind of summer staple dish.
Ah! I’m going to save this in my files, but it is entirely too cold here in St. Andrews for a little grilling fun unfortunately.
ohhh…definitely going to try this. I have a recipe for Grilled Mexican Corn on the Cob. It is wonderful!!! Similar concept. yum! http://www.travelynneats.com/2013/06/08/grilled-mexican-corn-on-the-cob/

Amen to that!!
Gosh I want this corn in my life! It looks so incredible!
Ok!!! Yummmmmmm! We have been eating corn every other day here too because it is just so good even when it’s plain! I can’t even imagine how awesome it would be with your recipe! Thanks for sharing!
Agreed – last night I made a big vegetable salad with raw corn in it, and it couldn’t have been sweeter or more perfect. Love ingredients that are so good, they don’t need a thing! (But yes, this recipe does take it to a whole new level…)
Yum!! I can’t wait to try this.
I made a salad version of this that I almost posted here last week 🙂
This looks delicious, perfect for summer.
This is seriously my favorite thing ever. I could eat that whole plate.
Om nom nom! Oh that looks incredible. My tummy is rumbling, I shouldn’t be teasing myself with these delicious pictures. Is it lunch time yet?…

sounds wonderful can’t wait to make it. Thank you
Gotta love the whole “grilled corn meets ethnic accompaniment.” And I love Siracha. Friend of a friend told me about another corn recipe – roasted with sweet chili pepper jam and queso fresco. Now, I have two yummy sounding corn recipes to try!
Gorgeous photos – I just love your site! This corn sounds so good!
Just made this corn this past weekend… thanks for sharing such an amazingly delicious recipe!! A real crowd pleaser!!
where does one find sraracha?
What is it?
Jaci, you’ve got to try it! I wrote all about my love for sriracha here: http://camillestyles.com/food-2/my-new-favorite-kitchen-staples/
Check for it in the asian section of your grocery store!
We’ve already made this 3 times since you posted it and we’re making it again for a party tonight! We just can’t get enough of it! So addicting! We sprinkle it with cotija as well and it is amazing!
Made it twice in one weekend, even a mayo hater (I didn’t tell her), LOVED IT.
Can I ask how spicy this is? This recipe looks amazing, but I can’t eat anything too spicy.
you can make it without the sriracha – mix mayo, chili powder, cotija cheese, and cilantro or parsley, then slather. squeezing in some lime juice works wonders as well.
I make this often…I will usually add Parm, for my son, but will add Cojita for my bf and I..its GREAT!
Tried this tonight, and it was amazing!!! Thank you for sharing the recipe!!! Will be making again ASAP!
Where can I find the sriracha sauce?
Most grocery stores carry it on the Asian aisle, but if yours doesn’t have one, check out any Asian grocery!
Just made this tonight for dinner for the first time and holy WHOA, this recipe is amazing! My husband, who normally doesn’t like sriracha (or anything too spicy) said not to put the sauce on his…but I did, and now there’s nothing left on the plate! So. Good. Will be making this again, for sure!
We make this all the time now! We do it inside a lot and just stick the corn in the oven. The sriracha mayonnaise mix we make for tons of different things too, like dipping for fries or to put on burgers! One of my family’s favorites.
