Apricot and Brie Tarte Soleil

Step 1. Prep the puff pastry. Flour two large sheets of parchment paper. Roll each pastry sheet out to about 13 inches wide.

Step 2. To assemble, shape one puff pastry sheet into a circle with knife. Then remove the top rind of the brie cheese wheel and place in the middle of the dough.

Step 3. Spread the apricot preserves evenly around the brie on the dough and leave about 1/2 inch border at the edge of the dough. Sprinkle on the salt, pepper, rosemary, thyme, and chili powder.

Step 4. Shape the second sheet of dough into a circle, and place on top of the brie and apricot preserves.

Step 5. Using a fork, press a border into the dough around the brie. Then using a knife, cut from border around brie to edge of dough, dividing circle into eighths.

Step 6. Then cut each 1/8 into 3 sections, twist each strip 2-3 times, and brush an egg wash over the dough.

Step 7. Place in middle rack of oven and bake for 30-35 minutes at 350 degrees F. Serve warm and enjoy!
