Banana Pumpkin Muffins

These muffins are healthy, simple, and perfect for an easy breakfast or on-the-go snack.

Step 1:

In a small bowl, prepare your flax egg by combining ground flaxseed with water and mix.

Step 2:

In a large bowl, mash a ripe banana with a fork. Add remaining wet ingredients and mix.

Add gluten-free flour, almond flour, baking powder, cinnamon, and pumpkin pie spice. Stir to combine.

Step 3:

Fill each muffin cup. Sprinkle coconut sugar and gluten-free rolled oats on top. Bake for 20 minutes.
