Bake veggies for 25-35 minutes. Add tender vegetables that need less cooking time, like ramps, at the halfway point to the tray.
While the vegetables cook, prep a 9 inch pie pan. Line with your crust. Remove vegetables from oven and lower the temperature to 350 F.
To prepare the quiche, layer vegetables and goat cheese in the pie dish and pour custard over the vegetables.
Place the filled quiche in the oven and bake for 40-50 minutes. Let cool and top with ingredients of choice.
