Vegetarian Moroccan Stew

A one-pot wonder. Celebrate fall with this vegetarian stew with chickpeas. The perfect plant-based main that takes just 30 minutes to make.

INGREDIENTS:  – olive oil – onion – garlic cloves – carrots – potato – cauliflower – cumin – turmeric – ground ginger – red pepper flakes – diced tomatoes – vegetable broth – chickpeas – for serving: fresh cilantro, lemon wedges, and bread of choice (optional)

Step 1: Sauté onion, garlic, carrots, potatoes, and cauliflower in olive oil.

Step 2: Add in the cumin, turmeric, ginger, a pinch red pepper flakes, salt, pepper, and tomato paste.

Step 3: Add tomatoes, broth, chickpeas, salt and pepper.

Step 4: Bring to a boil, then let simmer for 20 - 30 minutes.

Step 5: Sprinkle with cilantro and serve with lemon wedges and bread.  Enjoy!
