6 pieces of wild salmon
1 cup of pistachio meats (Trader Joe's makes a great product so you can cut out shelling time)
One large orange, zested (or any other kind of citrus)
1 teaspoon chopped fresh garlic cloves
Italian parsley (optional)
Salt and black pepper
- Crush the pistachios with a mortar and pestle (or less fancy in a Ziploc bag with a rolling pin or wine bottle!).
- Add garlic, orange zest, salt and pepper and mix to combine.
- Place a thick layer of the pistachio mixture on salmon filets and bake at 450 for 15 minutes.
- Finish with a squeeze of fresh orange juice and chopped parsley.
