Ingredients
- 1 cup broccoli florets
- 2 ripe avocados
- 1/3 cup chopped onion
- 1/2 chopped jalapeno, ribs & seeds removed
- 1/2 bunch cilantro
- 2 limes
- 1 clove garlic, chopped
- salt
Instructions
In a pot of boiling water, cook broccoli until very tender. Drain and run under cold water, then add it with all the other ingredients to a food processor. Pulse until well combined and mashed. Eat with raw veggies and pita chips!
Beet Hummus
Ingredients
- 2 cans of chickpeas (garbanzo beans) rinsed and drained
- 1 cup tahini
- 1/4 cup of fresh lemon juice
- 3 large garlic cloves minced
- 1 teaspoon ground cumin
- 3 medium beets cooled cooked (wrap beets in foil and cook at 425 degrees for 1 hour or until tender)
Instructions
In food processor combine all ingredients and puree until creamy. If too thick, add a little water to get to desired consistency.
Transfer to serving bowl and garnish with feta cheese, thinly sliced scallions, and sliced radishes.
