Ingredients

  • 1 cup broccoli florets
  • 2 ripe avocados
  • 1/3 cup chopped onion
  • 1/2 chopped jalapeno, ribs & seeds removed
  • 1/2 bunch cilantro
  • 2 limes
  • 1 clove garlic, chopped
  • salt

Instructions

In a pot of boiling water, cook broccoli until very tender. Drain and run under cold water, then add it with all the other ingredients to a food processor. Pulse until well combined and mashed. Eat with raw veggies and pita chips!

Beet Hummus


Ingredients

  • 2 cans of chickpeas (garbanzo beans) rinsed and drained
  • 1 cup tahini
  • 1/4 cup of fresh lemon juice
  • 3 large garlic cloves minced
  • 1 teaspoon ground cumin
  • 3 medium beets cooled cooked (wrap beets in foil and cook at 425 degrees for 1 hour or until tender)

Instructions

In food processor combine all ingredients and puree until creamy. If too thick, add a little water to get to desired consistency.

Transfer to serving bowl and garnish with feta cheese, thinly sliced scallions, and sliced radishes.
