Peanut Butter Banana Snack Cake

Ingredients

  • 1/2 cup creamy peanut butter
  • 2 egg yolks
  • 2 egg whites, whipped
  • 1/4 cup oil
  • 1 tsp vanilla
  • 1/4 cup milk
  • 1/2 cup granulated sugar (60g)
  • 1 tbsp brown sugar
  • 2 bananas, mashed
  • 1 1/4 cup flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp salt

Directions

  1. Line an 8x8 cake pan with parchment paper, set aside, and preheat oven to 350 degrees F.
  2. In a large mixing bowl, add the peanut butter, egg yolks, oil, vanilla, milk, and sugars. Whisk together until smooth.
  3. In a separate bowl, add the egg whites and beat to stiff peaks.
  4. Add the mashed banana to the wet ingredients and combine until incorporated.
  5. Fold the egg whites into three parts to the wet ingredients, being careful not to deflate the egg whites.
  6. Sift in the flour, baking soda, baking powder and salt. Fold into the wet ingredients.
  7. Pour into lined sheet tray and place in oven. Bake for 25-26 minutes until a toothpick comes out clean.
  8. Serve warm or wait to cool, frost, and enjoy!
