- 1 loaf sourdough, country bread, or focaccia, cut into thick slices
- Extra-virgin olive oil, for brushing and finishing
- 1 8-ounce log soft herbed goat cheese
- 8-10 ripe figs, halved or quartered
- 4 ounces thinly sliced prosciutto
- 1 handful fresh mint leaves
- Honey, for drizzling
- Flaky sea salt
Instructions
- Heat a grill to medium-high. Brush both sides of the bread generously with olive oil.
- Grill the bread until golden and lightly charred, about 1–2 minutes per side.
- Arrange the grilled bread on a large serving board with the goat cheese, figs, and prosciutto.
- Scatter the mint over the figs, then drizzle everything with honey and a little more olive oil.
- Finish with flaky salt and serve immediately.
