- 1 1/2 teaspoons salt

- 2 teaspoons baking powder
- 10 tablespoons butter, grated or chopped in cubes and kept cold until ready to mix
- 2–3 large shallots, chopped and sautéed in oil until translucent
- 3–4 large green onions, chopped
- 1 cup sharp white cheddar cheese, grated fresh
- 1 3/4 cups sour cream
- to assemble: heavy cream or milk, additional cheddar cheese
Instructions
- Preheat oven to 425 F and line a large baking sheet with parchment paper. Set aside.
- In a large mixing bowl, add the flour, salt, pepper, sugar, baking soda, and baking powder, and whisk to combine.
- Add the butter to the flour and combine with your fingers or a pastry cutter until butter is size of peas. You want butter to remain cold and chunky in the flour.
- Add the shallots, green onions, and cheddar to the mix and combine until coated.
- Add the sour cream and stir to combine using a spatula or your hands until dough begins to form. Turn the dough out onto a floured surface while still shaggy, and press into a rectangle about 2 inches thick. Cut rectangle into thirds, and stack the three pieces. Flatten again to about 2 inches thick, cut into thirds, and stack the three pieces. Repeat another time.
- This time when flattened, cut out into squares using a biscuit cutter or knife. Place cut biscuits onto a sheet tray.
- Using a pastry brush, brush tops of biscuits with cream or milk. Sprinkle with additional cheese.
- Bake for 18-20 minutes until biscuits are golden brown. Remove from oven.
- Serve warm with honey butter. Enjoy!
