Crispy Smashed Fingerling Potatoes

1. Make the herb sour cream. Mix all of the ingredients together in a small mixing bowl.

2. Boil the potatoes for about 12-15 minutes until fork tender.

3. Add the potatoes to a sheet pan, drizzle with oil, sprinkle with salt and pepper, and toss.

4. Smash the potatoes, drizzle with honey, and sprinkle with sesame seeds. Add the shallots and garlic, then drizzle with more olive oil.

5. Bake in oven for 30 minutes at 425 F, then flip the potatoes, and bake for another 15-20 minutes until golden brown.

6. To serve, spread the sour cream onto a platter. Add the potatoes, drizzle with chili crisp and lemon juice, and add fresh herbs. Enjoy!
