Mediterranean Grain Bowls

– quinoa – cucumber – tomato – black olives – chickpeas – red or black grapes – red onion – mint – parsley – basil – feta


1. Cook the quinoa.

2. Chop the cucumber, tomato, red onion, black olives and grapes.

3. Rinse and drain the chickpeas. Finely chop herbs.

4. In a large serving bowl, toss all the ingredients.

5. Make dressing: shake lemon juice, olive oil, greek yogurt & agave. Sprinkle feta. Eat!
