Oatmeal is usually a quick weekday breakfast option, but it can be a lot more than that. To do it right, opt for steel cut oats and a simple and luxe fruit compote. It’s Summer and that means the the produce is crazily bountiful right now. So, get creative with the compote and try it with whatever looks best at the farmer’s market. I promise you won’t miss your usual weekend pancakes.
Creamy Cracked Oats with Blackberry Lemon Verbena Compote

Morning Meals :: Creamy Cracked Oats with Blackberry Compote

Ingredients
- 1 1/2 cups almond milk
- 1 1/2 cups water
- 1 cup cracked oats
- 1 tablespoon maple syrup
- 1 tablespoon coconut butter
- 1/2 teaspoon cinnamon
- Freshly grated nutmeg, to taste
- Pinch of sea salt
Instructions
- In a large saucepan, combine water and almond milk. Bring liquids to a boil, then quickly stir in cracked oats. Let mixture return to a boil, then simmer.
- Let mixture cook over medium-low heat, stirring often. Once oats begin to thicken, stir in coconut butter, maple syrup, spices and salt. Let cook until reaches your desired consistency - usually about 20-25 minutes total.
for blackberry compote:
- 1 pint blackberries
- 1/4 cup water
- 1 lemon, juice and zest
- 6-8 lemon verbena leaves
- 2 tablespoons sugar
- While oats are cooking, add all compote ingredients to a small saucepan. Bring mixture to a boil, then simmer and let berries reduce.
- Once berries have broken down and compote has thickened, set aside to cool.
- When oats are finished cooking, top with a healthy dollop or blackberry lemon verbena compote. Serve immediately!

I wasn’t an oatmeal fan until I made this cracked oats recipe! I toast the oats with coconut oil before tossing them into the milk/water mixture and it just add its an extra punch of “toasty” flavor. Thanks for the awesome recipe!
