I’ve never met a veggie sandwich I didn’t like. Seasonal vegetables — whether fresh or cooked — are always a good idea. But when placed between two pieces of perfectly toasted bread, and accompanied by some salty, melty cheese, they reach a whole new level of deliciousness. If you ask me, there’s really no wrong way to combine them, but the ingredients I always come back to are avocado (duh), roasted eggplant, feta cheese and sprouts… mmmm.
