Last week, I returned from the ultimate getaway to Cabo San Lucas with girlfriends and sunshine galore. And let’s be real: I’m still in denial that reality has recommenced. Back in the Camille Styles office, I’m  attempting to infuse vacation (or staycation) mode into the air with this fruity sip that takes me back to the crystal blue waters of Mexico. Hints of coconut, lime, and mint complement sweet mango and papaya, my newest in-season staples. Looking to summon spring and summer? Grab your blender and get to it! Here’s to feeling those glorious rays of sunshine wherever we may be…

Ingredients

  • 1 cup fresh papaya
  • 2 cups frozen cubed mango
  • few sprigs of mint
  • 2 cups coconut water
  • juice of 1 lime
  • 1 teaspoon honey
  • pinch of sea salt

Instructions:

  1. Cut the papaya into cubes and place in blender. Add mango, a few mint leaves, coconut water, lime juice, honey, and salt.
  2. Blend until smooth. Pour into glasses and garnish with a sprig of mint.

Hi Lulu! it’s a knit racerback tank top from Old Navy a year or two ago… I love that it’s both lightweight and chunky!

Papaya sounds like an interesting twist- never would have thought to add this to a smoothie. This sounds amazing, definitely looking to try this one!
