The end of summer is always a little bittersweet: hello, cooler temps and pumpkin spiced lattes, goodbye lazy days and afternoons by the pool! This fall I’m determined to hold onto a little bit of summer’s more carefree attitude, and part of that means taking time to indulge in those take me away moments that help us recall a vacation state-of-mind. Especially when those moments involve fizzy cocktails. With colorful umbrellas.
We’re currently partnering with Terlato Wines on a fun project that’s all about wedding inspiration and dreamy destinations, and today’s cocktail was inspired by our first stop: a bachelorette party in eternally retro Palm Springs. This drink would be perfect for toasting your favorite bride-to-be, but would be equally delicious for any occasion where you want a tropical escape. It couldn’t be simpler to mix up, which is perfect since this cocktail is all about kicking back and relaxing (not worrying about exact measurements or mixology techniques.)
The recipe features vodka and zesty pineapple juice (does anything taste more like vacation?) topped off with crisp and fruity Nino Franco Rustico Prosecco. The drink is a refreshing complement to cocktail hour snacks like avocado carpaccio, everything toast, or veggie rolls with spicy nut sauce.
Serve it ice cold, and toast to the fact that, while summer fades, fruity fizzy drinks are a good thing all year around.

- pineapple juice
- Nino Franco Rustico Prosecco
- fresh pineapple and fresh mint for garnish
Instructions
Add 1 part vodka and 2 parts pineapple juice to a chilled coupe glass. Top off with Nino Franco Rustico. Garnish with a pineapple wedge and fresh mint.
I like the idea of holding onto summer a bit longer with a fun, fruity cocktail like this one. Can’t wait to give it a try on the next warm day September surprises us with.
