For the ginger mint simple syrup:
- 3/4 cup sugar
- 3/4 cup water
- 1/2 cup torn mint leaves
- 1 inch diced ginger root
For the lemonade:
- 6 to 7 large lemons
- 3 cups water
- lemon slices, for garnish
- mint leaves, for garnish
- To make the simple syrup, combine the water, sugar, mint leaves, and ginger root into a small saucepan over medium high heat. Bring it to a boil and stir until sugar is dissolved.
- Remove from heat, cover, and let the mixture steep for 30 minutes. Strain the liquid to separate the ginger and mint from the simple syrup.
- Juice the lemons. In a large pitcher, combine the freshly squeezed lemon juice, water, and ginger mint simple syrup. Chill for an hour and serve over ice.
