Mary's Summer Salad with Poppyseed Dressing
Serves 2-4
Mary's Summer Salad with Poppy Seed Dressing

Ingredients
- spinach and romaine
- 1 cup of fresh mozzarella
- 3-4 slices of bacon, cooked and crumbled
- 1/2 red onion, sliced
- 1/2 cup of curd cottage cheese
- poppyseed dressing (recipe below)
Instructions
- Combine spinach and romaine, mozzarella cheese, bacon and red onion slices.
- Rinse large curd cottage cheese in cold water and add.
- Add dressing and toss.
Poppy Seed Dressing
Ingredients
- 1/3 cup rice vinegar
- 3/4 cup canola oil
- a chunk of red onion chopped up
- 3/4 tsp salt
- 1/2 tsp dry mustard
- 1/3 cup sugar
- 2/4 Tbs poppy seeds
Instructions
- Blend all ingredients except for the poppy seeds until smooth.
- Mix in poppy seeds.
