I absolutely love hosting an evening with friends and family, enjoying a homemade meal, glass of bubbly and some unforgettable moments. One of my favorite things to serve is an Eating Purely menu that is both healthy and decadent. Yes, it’s possible to be both! Guests are always wowed, yet I put them at ease when I explain how easy the dishes really are to make. In this menu, we start with fresh spring rolls that are refreshing, crisp and pure. The spicy nut sauce balances out the delicate flavors of the vegetables, making it the perfect light appetizer to kick off the night! For the main course, Pistachio Crusted Salmon is my go to superfood fish entrée that is loaded with flavor, easy to prepare, and looks stunning on the table. I’m all about dessert, and this healthy, vegan rendition of cheesecake definitely does not disappoint. The decadent, velvety cashew filling will leave your guests utterly satisfied and coming back for more. Enjoy!

Pistachio Crusted Salmon with Garlicky Smashed Potatoes

Salmon is one of my favorite fish to eat. As a Top 10 Superfood, it’s loaded with omega-3s (both in EPA and DHA form) that help fight inflammation, make your skin glow, improve cardiovascular health, and make you feel great. This version of salmon is super flavorful, not to mention the addition of garlicky smashed potatoes make it even better. Serve with some sautéed garlic spinach to round out the meal.

Raw Raspberry Lemon Cheesecake

When I was 15, I discovered the Cheesecake Factory with my best friends from camp. I can still taste that life-altering first bite of cookie dough cheesecake. I literally thought I had found dessert nirvana. God knows what was in that cheesecake that made it weigh a pound. I don’t think I want to know. Here’s a much lighter and healthier option, which is actually raw. The cashews provide a totally rich taste; you’ll be surprised how amazing a raw cheesecake can be.
