I’ve never met a veggie sandwich I didn’t like. Seasonal vegetables — whether fresh or cooked — are always a good idea. But when placed between two pieces of perfectly toasted bread, and accompanied by some salty, melty cheese, they reach a whole new level of deliciousness. If you ask me, there’s really no wrong way to combine them, but the ingredients I always come back to are avocado (duh), roasted eggplant, feta cheese and sprouts… mmmm. Click through for some of the best veggie sandwiches I’ve found on the web, and I’d love to know what ingredients you’re looking forward to cooking with now that Fall is on the horizon.
