I had so much fun teaming up with the crew from Palate Films to host the pilot for a new web series concept called The Perfect Bite. In it, we’ll be going behind-the-scenes with top chefs to uncover their inspiration and how they define an absolutely perfect bite. The first one is with one of my favorite Austin-based chefs, Michael Fojtasek, of Olamaie. This is a longer-format video than what we’ve done in the past, so I’d love to hear if you enjoy this one, and please share any suggestions for the next ones, including which chefs you’d love to hear from!

Loved the video, and Camille, I could tell that you were enjoying every moment with Michael Fojtasek.
It is clear that you love creative cooking and the ideas and influences that go into preparing memorable dishes. Not only was the video a fascinating look at how a chef chooses ingredients, but I also picked up some tips on pickling and the novel technique of grating a pecan!
