Cucumber & Feta Salad

Serves 4


  • 2 English cucumbers
  • 1/2 red onion, thinly sliced
  • 1 block Feta cheese (I love Israeli, but you can use your favorite)
  • 1 bunch fresh dill
  • juice from 1 lemon
  • extra-virgin olive oil
  • coarse sea salt like Maldon, and freshly ground black pepper

  1. Slice cucumber into thin rounds -- halve them if large. In a large bowl, toss with red onion, then crumble feta over the top.
  2. Chop dill and sprinkle over salad, then drizzle with lemon juice and extra-virgin olive oil. Season with salt and pepper. Enjoy!

    What a lovely, refreshing salad! The addition of dill is everything!
