Simple syrup doesn’t always have to always be so simple. We love trying out new combos with this sweet, basic ingredient and taking any cocktail that calls for it to the next level. This honey-thyme simple syrup recipe in particular works well with sweeter cocktails that may need a more dry herbal flavor to balance out the sweet notes. Since it’s infused with honey, it also pairs well as an added sweetener for drinks that are more on the dry, bitter side. You truly can’t go wrong with this twist on your classic simple syrup recipe – it’s a guaranteed hit for just about any cocktail.

Honey-Thyme Simple Syrup

Serves 16

Honey-Thyme Simple Syrup

1/2 cup sugar

1/2 cup honey

1 cup water

10 sprigs of fresh thyme tied together with kitchen twine 


  1. In a small saucepan, combine the sugar, honey and water. Heat over medium high heat, stirring occasionally until the sugar is completely dissolved.
  2. Submerge the tied thyme in the still hot simple syrup and steep for 30 minutes.
  3. Remove the thyme and discard. Strain the syrup through a fine mesh sieve to remove any thyme leaves or other particles.
  4. Store in a glass jar in the refrigerator until cooled.
