I have so many friends who are vegetarian these days (including my sister-in-law who usually stays with us during the holidays), and there’s no reason they shouldn’t be able to feast as heartily as everyone else on Thanksgiving. With a main course like this acorn squash stuffed with quinoa, pumpkin seeds and kale, I’d almost consider skipping the turkey myself this year (especially when the meal ends like this one: with a chocolate & salted caramel pie!) Click through the slides for a perfect Turkey Day menu sans turkey, and I’d love to hear in the comments about your favorite meatless Thanksgiving mains!

Blood Orange & Bourbon Cocktail
Winter citrus plus warming bourbon are a match made in heaven.
Quinoa Stuffed Acorn Squash
Here’s how to make sure no one even misses the turkey: roasted acorn squash stuffed with sautéed quinoa and kale, then kicked up with scallions, tangy feta, currants, and pumpkin seeds.
Brown Butter Pumpkin Pasta
The sage makes it taste just right for Thanksgiving, but this is a vegetarian main you’ll want to cook up all winter long.
Chocolate, Salted Caramel and Hazelnut Pie
I’ve got to admit that the pie is my favorite part of the Thanksgiving meal, and this magnificent one takes it over the top.
