Vegetarian Thanksgiving

I have so many friends who are vegetarian these days (including my sister-in-law who usually stays with us during the holidays), and there’s no reason they shouldn’t be able to feast as heartily as everyone else on Thanksgiving. With a main course like this acorn squash stuffed with quinoa, pumpkin seeds and kale, I’d almost consider skipping the turkey myself this year (especially when the meal ends like this one: with a chocolate & salted caramel pie!) What are your favorite meatless Thanksgiving mains?

  1. We’ve been vegetarians for over 40 years and have done many kinds of Thanksgivings in that time. There’s no need for pretend meat for sure. Sometimes we go ethnic – we’ve had some scrumptious celebrations with Indian food – and a recurring favorite main is Anna Thomas’s Almond Crepes. And the Sweet Potato & Cranberry Strudel from Savory Baking by by Mary Cech was to die for.
