We’ve talked a lot around here about making the morning a happier, more peaceful time that sets a positive tone for the rest of the day. And I’m still a major believer in that, but y’all: it has really been put to the test since Phoebe started kindergarten last week. Fitting in a morning meditation and a workout while getting everyone dressed and out the door by 7:20am is quite the juggling act, and I’ll be honest that some days, it doesn’t all happen. But one thing that can’t be skipped around here is a healthy breakfast for everyone; that fuel-up is even more crucial now that our days are longer and busier. When it comes to nutritious breakfasts that are actually doable for a busy weekday morning, I rely on one of two strategies: (a) I can make it from start to finish in 5 minutes or less, or (b) it can be mostly prepped the night before.
