I think that sweet potatoes might be my desert island food.
They’re one of those veggies I could literally eat every day (let’s be honest, I do eat one almost every day), and I enjoy one steamed and topped with chickpeas and a dollop of greek yogurt for lunch, as much as I do one roasted and stuffed with black beans and avocado for dinner. So for me, the start of fall also feels like the official start to sweet potato season, when I can freely eat as many of them as I like because not only are they crave-worthy this time of year, they’re also peak of season and packed with nutrients.
