Sweeeet, dude.

I think that sweet potatoes might be my desert island food.

They’re one of those veggies I could literally eat every day (let’s be honest, I do eat one almost every day), and I enjoy one steamed and topped with chickpeas and a dollop of greek yogurt for lunch, as much as I do one roasted and stuffed with black beans and avocado for dinner. And yes, I’ve even been known to devour a cinnamon and brown butter topped sweet tater for breakfast… I could go on and on. So for me, the start of fall also feels like the official start to sweet potato season, when I can freely eat as many of them as I like because not only are they crave-worthy this time of year, they’re also peak of season and packed with nutrients.

Last month, zucchini was the star of the show – featuring plenty of simple, fresh dishes. This month, we’re beginning to cozy up to the idea of slow roasting foods and enjoying warming flavors. And luckily, sweet potatoes naturally lend themselves to all of the above.

Aside from feeling like a big warm hug topped with cinnamon, sweet potatoes are an incredibly healthy vegetable.

They’re a great source of fiber, help promote the growth of good gut bacteria, and they help to support your immune system. They can even give your vision a boost! And from a cooking standpoint, they’re extremely versatile, easily incorporated into sweet and savory dishes.

I can only eat roasted sweet potatoes so many times before I start longing to mix things up, so I’m always looking for creative ways to enjoy this magical veggie. From a twist on the classic sweet potato casserole to chocolate sheet cake (you read that right!), I’ve rounded up 11 very tasty sweet potato-based recipes that you can enjoy all fall long.

I love sweet potato, specifically sweet potato fries and mashed sweet potato. Definitely going to have to try some of these out!

Oh, how I miss sweet potato everything, especially a sweet potato pie…. My 5 year old is crazy allergic to them, his little body goes into shock even after a trace of it and we always end up in the ER. It’s a common vegetable to sneak into kids food (for example, a ton of popsicles have sweet potato juice), so we had to institute a “no food other than homemade” rule. I would caution against including any unusual ingredients in sheet cakes etc for kids/school parties, even if it’s a vegetable.
