Jicama Slaw with Tequila Lime Dressing

Ingredients
for the tequila-lime dressing:
- 2 tablespoons mayonnaise
- 2 tablespoons greek yogurt
- 1 tablespoon Sauza Tequila
- 1 tablespoon agave
- juice of 1 lime
- 1/2 teaspoon chili powder
- 1/2 cup cilantro leaves and stems
- salt and pepper
for the slaw:
- 3 cups shredded cabbage
- 1 cup shredded carrots
- 1 jicama, peeled and julienned
- 1/2 cup pomegranate seeds
- 1/2 cup pumpkin seeds
- 1/2 cup cilantro leaves, chopped
Instructions
- Combine all the ingredients for the dressing in a blender or food processor and blend until smooth and well combined.
- In a large serving bowl, mix together the cabbage, carrots and jicama, then toss with dressing. Allow to marinate for at least 1 hour and up to 4 hours.
- Add rest of ingredients just before serving. Toss and eat!
