Mexican Chopped  Salad

This salad is simple and delicious—your taco nights need it. Hearty enough for a vegetarian main or perfect as a side, here's how to make it.

INGREDIENTS fresh greens spicy chickpeas spicy carrots cucumbers pumpkin seeds sunflower seeds queso fresco cilantro honey-shallot  vinaigrette

Step 1: Prep your veggies. Marinate the chickpeas and carrots in honey, lemon juice, rice vinegar, olive oil, chili flakes, and salt.

Step 2:  In a large bowl add the greens, cucumber, seeds, cheese, and cilantro.

Step 3: Pour dressing over top and toss to combine. Add the marinated chickpeas and carrots.

Step 5: Drizzle more dressing and enjoy!
