Mary's Summer Salad with Poppy Seed Dressing

  • spinach and romaine
  • 1 cup of fresh mozzarella
  • 3-4 slices of bacon, cooked and crumbled
  • 1/2 red onion, sliced
  • 1/2 cup of curd cottage cheese
  • poppyseed dressing (recipe below)


  1. Combine spinach and romaine, mozzarella cheese, bacon and red onion slices.
  2. Rinse large curd cottage cheese in cold water and add.
  3. Add dressing and toss.

Poppy Seed Dressing


  • 1/3 cup rice vinegar
  • 3/4 cup canola oil
  • a chunk of red onion chopped up
  • 3/4 tsp salt
  • 1/2 tsp dry mustard
  • 1/3 cup sugar
  • 2/4 Tbs poppy seeds


  1. Blend all ingredients except for the poppy seeds until smooth.
  2. Mix in poppy seeds.
