Mexican Inspired Salad

Mexican Inspired Salad
Categories
Ingredients
- Greens (whatever looks the best, but think butter leaf, kale, arugula)
- Sliced tomatoes (small heirlooms, cherry or grape)
- Thinly sliced green onions
- Thinly sliced radish (shaved on a mandolin is best)
- Hand full of cilantro leaves pulled from the stem
- Fresh corn cut off the cob
- Goat cheese or cotija cheese to sprinkle on the top
- Sea salt and freshly ground black pepper
- Dressing
- Olive Oil
- Fresh lime juice
- A small dash of apple cider vinegar
- Toasted cumin seeds semi ground in a mortar and pestle
- Minced jalapeno
- Drizzle of honey
- Sea salt and fresh ground pepper
Instructions
- Shave radish and slice tomatoes, green onions, and corn off the cob.
- Combine salad ingredients in small or medium sized bowl.
- Whisk together dressing ingredients and pour on salad.
Yum! I love that you mixed radish into this mix because I tell ya – lately I could put radishes on anything! I’m looking forward to trying this!
