Rainbow Kale Slaw

Rainbow Kale Slaw

Ingredients
- 1 head lacinato kale, shredded
- 1/4 whole head red cabbage, shredded on mandolin
- 2 carrots, thinly sliced on mandolin
- 1/2 cup cranberries
- 1 apple, quartered, cored, and thinly sliced on mandolin
- 1/2 cup toasted pecans
- 1 cup basil, julienned
Instructions
Mix together kale, cabbage, carrots, and apple, then toss with vinaigrette. Allow to marinate for at least 1 hour and up to 4 hours. Add the rest of the ingredients just before serving.
Vinaigrette
Ingredients
- 1 tbsp dijon
- 3 tbsp mayonnaise
- 1 tbsp greek yogurt
- 1 tbsp honey
- juice of 1 lemon
- salt & pepper
- 1/2 tsp chili powder
Instructions
Mix together and use to top kale slaw before serving.

I’m so glad I decided to keep around my mandolin in my move, with summer in full swing it’s not to be able to make raw salads like these with it!
