Rainbow Kale Slaw

Serves 6-8

Kale Slaw

ingredients


  • 1 head lacinato kale, shredded
  • 1/4 whole head red cabbage, shredded on mandolin
  • 2 carrots, thinly sliced on mandolin
  • 1/2 cup cranberries
  • 1 apple, quartered, cored, and thinly sliced on mandolin
  • 1/2 cup toasted pecans
  • 1 cup basil, julienned
instructions


Mix together kale, cabbage, carrots, and apple, then toss with vinaigrette. Allow to marinate for at least 1 hour and up to 4 hours. Add the rest of the ingredients just before serving.

Vinaigrette

ingredients


  • 1 tbsp dijon
  • 3 tbsp mayonnaise
  • 1 tbsp greek yogurt
  • 1 tbsp honey
  • juice of 1 lemon
  • salt & pepper
  • 1/2 tsp chili powder
instructions


Mix together and use to top kale slaw before serving.

    I’m so glad I decided to keep around my mandolin in my move, with summer in full swing it’s not to be able to make raw salads like these with it!
