- 1 head lacinato kale, shredded
- 1/4 whole head red cabbage, shredded on mandolin
- 2 carrots, thinly sliced on mandolin
- 1/2 cup cranberries
- 1 apple, quartered, cored, and thinly sliced on mandolin
- 1/2 cup toasted pecans
- 1 cup basil, julienned
Mix together kale, cabbage, carrots, and apple, then toss with vinaigrette. Allow to marinate for at least 1 hour and up to 4 hours. Add the rest of the ingredients just before serving.
- 1 tbsp dijon
- 3 tbsp mayonnaise
- 1 tbsp greek yogurt
- 1 tbsp honey
- juice of 1 lemon
- salt & pepper
- 1/2 tsp chili powder
Mix together and use to top kale slaw before serving.
