This time of year, my craving for a refreshing, healthy salad is just about insatiable. And while I can’t live without the go-to kale or arugula variety, a weeklong marathon of the same salad on repeat usually has me longing for something other than leafy greens and veggies topped with olive oil and balsamic vinegar. Enter my newest obsession: this raw broccoli salad with apples and dried cranberries, and a Sriracha dill yogurt dressing. The crunchy broccoli florets and apple make it super hearty and filling, while the the rest of the ingredients pack a major flavor punch. Raw Broccoli Chopped Salad

Serves 2-4

Raw Broccoli Chopped Salad

Ingredients

1 head broccoli, chopped

1 large apple (I prefer Honeycrisp or Gala), finely chopped

1/2 small red onion, finely chopped

1/3 cup sliced almonds

1/3 cup dried cranberries

for the dressing:

1/4 cup Greek yogurt

1/4 cup mayonnaise (or sub with Veganaise)

1 Tbs honey

1/2 Tbs Sriracha

4 sprigs fresh dill, finely chopped and for garnish


Instructions

  1. Combine all dry salad ingredients in a large mixing bowl.
  2. Whisk together all salad dressing ingredients, and adjust to taste.
  3. Toss the salad with the dressing, and serve.

    Saw this the moment I decided one more leaf of arugula just might make me turn green! Love the unexpected combination of sweet/savory/crunchy. Should wake up a side of grilled salmon or chicken quite nicely.

    I made this last night. It was a hearty and filling salad with a great dressing. Personally, I would recommend less red onion as the Sriracha adds enough of a kick.
